2% Milk and all that…

The 2% in 2% milk is a measurement of the fat component by weight – 20 grams per 1 liter is fat.
Cheating to express it that way some consumers say, but we express most other food components in the same way – don’t we? 🙂
Full Cream Milk has about 3.5% fat by weight, so you save about half the calories drinking 2 %.
What you must keep in mind is that 1 liter of full cream milk has about 620 Calories – only about a 5th of what a rather sedentary male of about 175 Pounds needs to maintain his bodyweight! So drinking a liter of milk a day – and I don’t know many people that do that – does not contribute as many calories as people think.

Clean Cooperative Dairy Milk Production

When supplying milk to a cooperative it is of vital importance that the cooperative has a milk payment scheme according to which the farmers are paid. This is not only advantageous to the farmers, but also to the cooperative and to the consumers.
For the farmers the results of the test being done help them in managing their business and for the cooperative it means that they get what they pay for. Nobody can make an excellent product from bad raw material.
Meetings have to be held so that there can be agreement on what the specific tests will be and how much each component will impact the milk price. Usually these tests consist of Total Plate Count, Somatic Cell Count(Mastitis test) , Solids ( Fat, Protein and Lactose). Benchmarking to another dairy is of course a good idea.
Other non-qualitative factors that influence the milk price the farmers get are the distance the tankers have to drive to pick up the milk and the volume of milk supplied by the specific farmer.
This is the basics of management of paying for clean cooperative dairy milk production.

Cleaning Dairy Equipment

Like in life – so it is with dairy – always remember the basics!
When cleaning dairy equipment always give a cold water rinse until the water runs clear, then hot water alkaline, rinse, acid, rinse and finally sanitiser.
I still see hot water being used initially and that will definitely leave a protein deposit. Ask your mom about this – any protein stain must get as little heat as possible.
Some additional points: Clean all milk contact surfaces – If milking more than once per day; go through the whole cleaning process every time.
Bacteria come from many sources on the farm – animals, air, water, equipment, people and feed.
Check absolutely everything.

A gallon of milk an hour?
Hi,
Why is that some idiots ask questions like: “Can you drink a gallon of milk in an hour?”
Come on people are you really that bored?
Well drinking a gallon of water in that time have caused death – same with any liquid. Milk will not be different, I’m sure. It should also supply you with about 2400 calories I think?!
Hhahaa, cannot believe the questions some people ask.

Dairy Allergies

Now there is a hot topic!
I have very funny (I have been told) views on this, for one thing, I do not consider being pricked with some substance, being an accurate test for food allergies, because everything we eat are digested and not deposited directly into the bloodstream!
Another thing – I come from a wheat farming area and my wife not – every time we go to visit my parents, her allergies fire up 😉
I know what you’re thinking!
Well I am not a doctor, and I won’t give too much advise, but I think if you suffer from any allergies it would be worth your while to check out Vitamin B5, C , A and E supplementation. Well of course all vitamins and minerals are important, but I have found these four to be especially helpful with allergies.

Investigative Control Biology

Some people have been asking what the above topic is. Well after fishing around or should I say milking my resources 😉 it seems that it has something to do with teaching students to think and to construct their own experiments around that.
Is thinking a new concept? Just joking!
I think dairy people will be more interested in something like investigative microbiology which is also out there.
The purpose of these courses are to give students experience in completing an independent science research project. Students will learn basic concepts before venturing into investigative work. Students will also practice basic lab techniques used to culture and view bacteria. They will research a project in which they design and conduct their own experiment and present their findings.This is an excellent way to pull theory together in an interesting way and helps a lot to solve problems when the students step into a real job someday. It greatly improves the thinking process in solving problems and helps to give the student a more finished and rounded education.
Now do not start mailing me and asking me who presents these courses, you are on the internet – you found me – get the idea!

Ekomilk
Hi,
I had an Ekomilk Milk Analyser in the lab today to calibrate. It was one of the older models and had 2 testing channels; for cow and sheep milk .
I think for most dairies in South Africa it would be more practical to have a processed cow’s milk channel and a raw cow’s milk channel, except if you have sheep, haha.
If you are not familiar with this little piece of equipment, it tests milk with ultrasound technology instead of the Infra-Red technology I am used to. I think it does a pretty stand-up job for the price and it very robust, so that anybody can work with it in most conditions.. Thumbs up!

More on Generic Dairy Marketing

I’m shocked to see all the people that make it one of their life’s works to negate dairy on the internet! They calculate how cow farts polute and destroy the ozone. I know a few guys who should also raise public concern in this way, if you know what I mean – and they are not big dairy consumers ;-)Dairy producers will have to stand together in promoting dairy, since we all know how fresh milk sales are dwindling….
Any comments in putting something useful out there would be appreciated.
