Chinese dairy companies have been urged to take advantage of abundant domestic resources of buffalo and sheep milk to grab a share of the country’s burgeoning cheese market.

After working in China for 10 years and watching the dairy industry closely, there are a number of misunderstanding, when the West looks at the East. One such topic is dairy. Mostly due to Chinese parents now believing dairy will help grow their kids bigger, is dairy sold. Most Chinese detest cheese and do not have a dairy palette as of yet. With 99% (generalization) of the consumption being UHT milk and drinkable yogurt. I have watched the dairy cooler section grow tremendously within the last 24 months, but still it is mostly UHT milk and drinkable yogurt. There is virtually no cheese produced and most of it goes to the expat community. I believe 2 dairy plants now produce some processed cheese and soft cheese and one or two plants now produce butter. There was virtually no milk standardizing in China even 2 years ago. Don’t get me wrong, the dairy industry is exploding, but only in a few product areas.
